Ever since moving to Saratoga in 1993, Jason Friedman has envisioned opening a deli for the locals like the ones he grew up eating at in the neighborhoods of Long Island.
These delis had soul. They did things the right way and didn’t take shortcuts.
We hope you’ll find Fat Paulie’s Delicatessen a fitting tribute to the ideals of these old school delis, and a nice addition to the already great delis and restaurants that Saratoga has to offer.
Here’s how we stay true:
Everything at the deli is made in-house using traditional methods and preparations including all prepared deli salads, stocks, sauces and soups.
Fresh bread is delivered every single day from Anthony & Sons Italian Bakery downstate.Yesterday's bread is used as breadcrumbs and croutons.
Fresh mozz is made every single day from local milk.
All meats are roasted in-house and imported salumi is meticulously sourced from all over Italy.
Sandwiches are made one-at-a-time with the meat sliced to order.
We try to work smart, but refuse to take shortcuts. We take care of our staff and our customers.
We’re making heroes over here!
